Join chef and fermentation enthusiast Sam for a 3 hour Korean Kimchi making masterclass where you'll blend tradition, science, and serious flavor.

You won't just learn a new skill—you'll leave with a massive 2L jar of custom spiced White Cabbage Kimchi to ferment at home!

🥢 What You’ll Do (The Experience)

We don't just dump vegetables in a jar. This is an interactive, social, and deeply satisfying cooking class:

  • The Spiciness Calibration (Kimchi Tasting):

Not sure how much heat you can handle?

Sam will prepare three separate batches of Kimchi 12 days before the workshop, ranging from mild to fiery.

You’ll taste them all to find your perfect spice level!

  • The Prep & Craft:

Learn the science of knife cuts and how shapes impact texture, crunch, and mouthfeel.

We'll mix up a vibrant paste using white cabbage, radish, carrot, apple, garlic, ginger, and traditional sauces.

  • The Fresh Snack:

Any Kimchi that doesn't fit into your massive 2L jar?

We'll top it with roasted sesame seeds and eat it fresh on the spot as geotjeori!

  • The PostClass Perks:

After the workshop, you'll get a detailed step by step PDF recipe complete with exact gram measurements, ingredient deep dives, and a curated list of where to buy the best local ingredients in Amsterdam.


🌱 Dietary Note:

The standard recipe uses fish sauce and saeujeot (shrimp).

Vegan, vegetarian, and glutenfree alternatives (using miso, soy sauce, or tamari) are fully available!

Just message Sam ahead of time so your station is ready.


🎒 What’s Included & What to Bring

Everything you need to cook is provided: All fresh ingredients, kitchen equipment, an apron, gloves, and your high quality 2L preserving jar.


What you need to bring/wear:

A strong tote/carrying bag: Your completed 2L jar of kimchi is heavy—it weighs nearly 4KG!

Dark clothing: While aprons are provided, chili paste stains are real.

Leave your favorite white tee at home!

Price: €70 per person (Includes all ingredients, jar, and digital recipe pack).


⚠️ Important Booking Info:

Strictly limited to 12 spots.
To secure your place, tickets must be bought in advance via Eventbrite.
No walk-ins or cash on the day.

One ticket per person.
Tickets cannot be shared (e.g., couples cannot share one ticket/one jar of ingredients).

Ticket sales close the night before the workshoop at 9:00 PM so ingredients can be perfectly allocated.

100% refund if cancelled 7+ days in advance.

50% refund if cancelled less than 7 days in advance.

No refund if cancelled under 48 hours before the event.

In the rare event the workshop is cancelled by the host, a full refund will be issued within 24 hours.


👨‍🍳 Meet Your Instructor: Sam Tsang

Your host, Samuel Tsang, has over 15 years of experience as a professional cooking teacher. Growing up in his family’s restaurants in West London, food is in his blood.

He formally trained at the prestigious Leiths School of Food and Wine and has showcased his skills on major UK television shows including BBC’s MasterChef Goes Large, Britain's Finest Dish, and Chef versus Britain with Gino D'Acampo.

When he isn’t fermenting, Sam is a published author on mindful origami and hosts popular Asian arts, crafts, and popculture workshops across the Netherlands.
