Join me to travel through Mexico, sauce by sauce and experience the joy of working with fresh and dried chili peppers.I am Marcela Rojas, Chef of El Metate. I love to introduce the Mexican flavours to people in The Netherlands and to offer alternatives for people with diet restrictions.During this workshop, you will learn three techniques to prepare 4 delicious and rich Mexican Sauces that form an essential cornerstone of Mexican cuisine. We will start with a brief introduction about the variety of dried and fresh chilli peppers, their origin, their stories and how to use them.After this, we will work together to transform them into concentrated and balanced sauces that transcend their humble ingredients. The end result is a variety of delicious sauces with countless applications.You will be able to easily replicate these recipes at home to surprise your family and friends. Which sauces we will prepare?* Salsa Bandera (Pico de Gallo).* Molcajete Red Sauce. * Jalapeño Green Sauce. * Ranchera Sauce and a Surprise Sauce What is included?•	All the ingredients and materials to prepare the sauces•	Refreshing hibiscus water (agua fresca)•	4 Sauces to take home•	An engraved chopping board and knife as a gift* Recipes.What to bring?•	A smileCorona protocol.We will follow the protocol for safe training by NOBSTRA, each participant will receive the protocol before with instructions for attending the workshop.The number of participants is limited to guarantee 1.5 meters distance.
