Oh My Miso!

It's a curious thing that comes from a wonderful process: miso. Traditionally, miso is always made from fermented soybeans. But there is soo much more to explore. How about kapucijner miso? Or...?
The result is always an intriguing, delightful basis for further preparation.

In this workshop you will learn:
  • The basis: what is fermentation, miso and koji?
  • How is the traditional miso made?
  • What variations are possible?
  • What can you do with it? Uses and Recipes
Under the guidance of Erike Hirose of WakeEat, you will take the first steps of the process. Miso requires a minimum of 6 months, but the intended end result can be enjoyed happily, as Erika has already made a batch in spring.
