Ever wondered what it actually takes to cook at Michelin-star level — not just watch someone do it on TV, but roll up your sleeves and make it yourself?

This is that evening.

Chef Hugo opens his home kitchen in Hoofddorp for an intimate hands-on cooking workshop where you and 7 others work through a full four-course menu inspired by the recipes and techniques of Heston Blumenthal and the Fat Duck kitchen. French and Italian classics, executed with precision, in a Dutch home. Then you sit down together and eat everything you made.

The menu:

🥂 On arrival: Mocktail & Charcuterie & cheese shared platter

🐚 Starter — Scallop Tartare with White Chocolate A Fat Duck classic that once divided the food world. Raw scallop tartare, seared scallop disc, white chocolate foam, prawn oil, caviar. You'll understand why it works.

🥩 Main — Sous Vide Lamb Chops & Tapenade Rack of lamb cooked sous vide at 60°C, finished on the grill. Served on a Shiitake Mushroom Risotto with acidulated butter and Parmesan. Tapenade from scratch.

🍎 Dessert — Arlette with Pressed Apple Terrine Layered puff pastry with apple gel, rosewater cream, crystallized fennel seeds and vanilla salt. Elegant, precise, surprisingly achievable.

How the evening works:

You arrive as a group of 8 — paired into 4 teams of 2. Each team takes ownership of one course or key component, guided step by step by Chef Hugo. You learn the technique behind every dish: why sous vide beats conventional cooking for lamb, how white chocolate and scallops actually make sense together, what acidulated butter does to a risotto.

Then the kitchen becomes the dining room.
