Hugo van Schaik is a designer by profession and a passionate private chef by calling — a combination that shows in everything he does. Since 2012 he has been hosting private dinners that translate the science and precision of Michelin-starred kitchens into an intimate, personal setting.

Inspired by the culinary philosophy of Heston Blumenthal and the Fat Duck team, Hugo approaches cooking as a discipline: understanding why a technique works matters as much as executing it. Visits to acclaimed restaurants across Europe and years spent studying the cookbooks of chefs like Robuchon, Ducasse and Ottolenghi form the foundation of his menus.

His home restaurant in Hoofddorp — just 20 minutes from Amsterdam Centraal — seats a maximum of 12 guests per evening. One group. One menu. All attention on you.
